Thinking about it now, it was pretty much exactly a year ago to the day!
I'd just started seeing my boyfriend Matt, and bout a month in & I decided to make him a lemon meringue pie.. because I was bored after work, loved baking, and well, I knew he liked them too!
This was the first dessert I'd ever made for him. I just wanted to show I cared!
Maybe even show off a few cooking skills. All brownie points, haha x
So, I went home, started making this pie, ready to head over to his a couple of hours later..
All going well, everything made from scratch; pastry, lemon curd, meringue.
(The most heavenly combination of ingredients!)
After I blind baked the pastry & while I made the curd, I got all my ingredients together ready to make the meringue!
I was rather excited about using my new Kenwood mixer! All shiny and colorful.. and great reviews about the meringue it produced!
So, curd into the pastry base & off I went, making the meringue.
This is where it all went wrong!
It. Wouldn't. Hold.
No matter what I tried, it wouldn't form soft peaks. It just stayed limp and soggy.
NOT IDEAL.

It was a scorching hot day. I thought that might be it. The heat? But I'd kept everything nice and cool on purpose. Nope, that wasn't the only thing, it couldn't be. So I checked the eggs. Nope, in date..
Did I over whisk it? No, it didn't solidify at all?! GAHHHH!
I'd never had this issue before. I'd make meringue dozens on times, and 9/10 it went perfectly! I'd even found myself, in my tiny flat with no storage space, hand whisking egg whites in a tiny pyrex bowl. Perfect meringue.. Curtains covered.Anyway, I found myself in quite a fluster.
The heat was getting to me, the time was ticking away, and all I really wanted was a big hug from Matt.. followed by lemon meringue pie.
At this rate, I wasn't going to get either :( x
I persisted.. put the machine on full pelt.. but still nothing.
SO, I gave up. I whisked it a bit by hand and threw the not so peaky mixture onto my ridiculously lemony curd base and whacked it in the oven.
After the agonizing wait, I got sorted and trudged down my flat staircase to my car, holding my not so great 'lemon meringue flan' with a pair of oven gloves and ignoring the state of my kitchen.. I headed over to Matt's.
He laughed.
He was appreciative, but he laughed. We laughed. Then we ate it.
2hrs later than intended and not half as visually appealing.
I was not too happy..
Then... to my horror.. a little while later it suddenly occurred to me.. and I hung my head in shame.
