Preheat the oven to 200C.
4-8 (British!) Sausages 225g Plain Flour 250ml Milk 4 Eggs Salt & Pepper A big glug (aka 1tbsp) Oil (Rapeseed Oil is the best!) Serve with lovely creamy mashed potato, cabbage & lots of gravy! | Cook the sausages in a big pirex dish (the one you're going to cook the whole thing in!) for 10 mins with the oil. While the sausages are cooking.. whisk the eggs, milk & flour together in a bowl/jug with an electric whisk until light, fluffy and smooth. Season to taste. When the sausages are cooked, quickly take them out of the oven & pour the batter around them (the oil should bubble). Put back in the oven and cook for 35mins.. |

I've found myself making this quite a lot, and it turns out, the more you make it, the better it gets!
This one we made a couple of weeks ago was peeeerfect!
Top tips: Just remember
1. no matter what (apart from a ginormous fire, duh!).. DO NOT open the oven door till the timer goes off, or it'll collapse!
2. Whisk the batter till it's nice and airy!
3. Make sure the oil is sizzling hot when you add the batter :) x
